Wash and dry all produce. Trim and thinly slice @scallions{2%unit}. In a #medium bowl{}, combine @mayonnaise{2%tbsp} and 4 tsp of the @white wine vinegar{5%tsp}(divided). Add @shredded carrots{4%oz} and toss to coat. Set aside.

Dice @Yukon Gold Potatoes{24%oz} into 1/2-inch pieces. Place in a #large pot{} with enough salted water to cover by 2 inches. Cover and bring to a boil over high heat. Once boiling, lower heat to medium. Cook until potatoes are tender, 15-20 minutes. Reserve 1/2 cup potato cooking liquid, then drain through a #strainer{} and return potatoes to pot.

Meanwhile, rub @pork tenderloin{24%ounce} with a large drizzle of @olive oil{2%tsp}. Season generously all over with @salt{} and @pepper{}. Reserve 1/4 tsp of the other spice in a #small bowl{} for the next step; rub the pork all over with the remaining Smoky Southwark {Smoky}{2}? Actually `@Smoky Cinnamon Paprika Spice{2%tbsp}(divided)`.

Place pork on a #baking sheet{} and roast until cooked through, 18-20 minutes. Let rest ~{5%minutes} before slicing.

While pork roasts, quarter @apple{1%unit}, core, and thinly slice; add to the bowl with carrots and toss to combine. Stir in half the scallions and season with salt and pepper. To the small bowl with the reserved spice, add @cherry jam{6%tbsp} and the remaining vinegar; and stir together. Microwave until warm ~{45%seconds}. Stir in @butter{4%tbsp}(1 tbsp for 4 servings) until melted. Season with salt and pepper.

Mash the drained potatoes with a #large pot{} and #potato masher{} until smooth. Stir in @sour cream{4%tbsp}, @butter{4%tbsp}, remaining scallions, and reserved potatoes, a splash at a time until creamy. Season with salt and pepper.

Slice pork crosswise. Divide pork, potatoes, and slaw between plates. Drizzle sauce over pork and serve.
